Nimbu Pani Pudding Ice Cream

Putting chaat masala in ice cream was an experiment that I was certain would result in failure. I simply did not expect it to be good. But it turns out that I was very wrong. Chaat masala is an acquired taste to be sure, but if you like it in savory snacks you must try it in ice cream. It is equal parts confounding and familiar, and perhaps that conundrum is partially what leads to its splendor.

Chaat masala in ice cream is amazing. It perplexes at first and then brings you to a moment where you realize how well such an in-your-face component such as chaat masala works in a sweet application such as ice cream. It's truly something you must experience. 



Nimbu Pani Pudding Ice Cream is neither a pani nor a pudding per se, but it has components of both. It comes together so easily yet has an outsized result relative to the effort. 



  1.  Combine the evaporated milk, whole milk, sugar, salt and chaat masala in a blender and blend on the lowest setting for about 5-7 minutes until the sugar is completely dissolved. 
  2.  Add the lime juice and heavy cream, blending at low speed until just combined. You want to be careful not to blend any of this at high speed as to not incorporate air into the milk or cream.
  3.  Churn in your ice cream maker according to the machines instructions.
  4.  Add broken pieces of Nilla Wafer cookies to the ice cream before freezing.

227g whole milk
177g evaporated milk
114g heavy cream
148g sugar
15g chaat masala
3/4 cup lime juice
1/4 teaspoon salt
10-15 Nilla Wafer cookies
